DUTCH BABIES:

Blend in blender: 

6 eggs 

1 1/4 Cup milk

1 1/4 Cup flour


Melt one cube butter in corning dish (9x12) at 425 degrees. Pour into dish with melted butter - bake at 425 degrees for 15-20 minutes (no longer). Cut into squares or wedges. Serve with sliced canned peaches, powdered sugar, lemon slices and cool whip. (In place of peaches, may use any canned fruit or fresh strawberries).

SWEET POTATO PECAN PIE:
Ingredients:

3 eggs 

1 c. mashed and cooked, 

or drained canned 

sweet potatoes 

2/3 c. firmly packed dark brown sugar 

1/2 c. dark corn syrup

1 1/2 tsp. vanilla

 

1/4 tsp. cinnamon

dash of nutmeg

1 (9-inch) unbaked pie crust

1 c. pecan halves

Preheat oven to 350 degree. In a large bowl, beat the eggs lightly. Beat in mashed sweet potatoes, brown sugar, corn syrup, vanilla, cinnamon and nutmeg until well mixed. Pour mixture into pie crust. Sprinkle with pecans. Bake for 1 hour and 15 minutes or until knife inserted in center comes out clean, Remove to wire rack and cool completely. Serves 8.
